Jays Chocolate Date Balls Vegan Gluten Free Recipe Food Foodie

One Box of pitted Dates, 500g or 3 cups
Lemon Juice (or water)
One bag of shredded coconut (unsweetened) 400g
2 cups of uncooked oatmeal
4 - 6 heaping tablespoons of Cacao Powder
Pinches of Cinnamon

Add dates and a few squeezes of lemon juice into a pot, stir over medium heat for about 15-20 minutes, keep adding lemon juice or water and heating until dates cook down into a pureed or whipped consistency. Stir in cacao powder until dates are nearly colored black. Gently mix in coconut shreds. Slowly stir in oatmeal until mixture gains a thick consistency that you are able to ball up with your hands. Drop spoonfuls, roll and pack into balls and set on a tray. Sprinkle cocoa powder on balls, place one pinch of cinnamon on each rolled ball, roll balls in your hands until cacao and cinnamon are equally covering the date balls. Cool. Serve. Enjoy!
