1 Cup of Gluten Free flour (or regular flour for everyone else)
1 Tablespoon ground flax
2 Teaspoons of Baking Powder
2 Teaspoons of Cinnamon
1/4 Teaspoon of Salt
1/4 Teaspoon of ginger powder (Optional)
1/4 Teaspoon of Nutmeg (Optional)
2 Tablespoons of Brown Sugar/Raw Sugar (Alternatively you can use honey, or maple syrup, if this is the case add this to the wet mixture below)
1 Teaspoon of Vanilla
1/4 Cup of Unsweetened Applesauce
1 1/3 Cup of Almond/Coconut/Cashew Milk
Combine dry ingredients in one bowl and mix. Combine wet ingredients in another bowl and mix well. Slowly add wet mixture into the dry bowl until it reaches a smooth consistency.
Pour slowly onto pancake griddle on medium heat (I used coconut oil to grease the pan). Cook until small bubble holes appear all over the top of the pancake, then flip, the second side does not take as long as the first side to cook so be careful.
Turn oven to lowest heat setting and keep cooked pancakes warm on a tray.
Add pure maple syrup, serve and enjoy!
