Jays Noodles, Cheese, Guacamole and Brocoli - Vegan Gluten Free


3 Part Recipe
Box of Gluten Free Rice Noodles
Guacamole
Vegan Cheese
Broccoli

(Prepared ahead of time)
Guacamole Recipe
3-4 garlic cloves
Half a small onion
3-4 Avocados
1 Lime

In a food processor or blender loosely chop garlic and onion, peel avocados and blend in one at a time until there is a consistent consistency. Yes I just said that. Squeeze the lime juice into the mixture and blend. Add salt and pepper to taste (At least one pinch of salt should be used as it will bring out the flavor while your mixture is setting)
Avocados turn brown no matter what you do, to fight this off for a day or two I use cellophane wrap over the dish, push the cellophane down so that it touches the Guacamole squeegeeing out any air bubbles and fold the cellophane over the bowl or tupperware, add lid and let set for a couple hours to let the flavors settle in with each other. 

Vegan Cheese!
This is something I created by accident one day when I was experimenting with flax eggs for the first time.
 
3 heaping spoonfuls of flax powder
1/2 teaspoon of salt
4-5 tablespoons of water (Alternatively you can use carrot juice for that cheezy orange flavor)
1 tablespoon coconut oil

Blend flax, salt and water(carrot juice) in a bowl with a fork making sure all the dry lumps have been worked out. Let sit for 10 minutes. Place into a frying pan on medium heat with a tablespoon of coconut oil (This is important because real cheese has that fatty oily content when it is melted). Using a spatula stir the flax doughy mixture in with the coconut oil, as it starts to thicken start to flip the doughy substance over itself, folding on top, folding on top, until it thickens to the consistency of your choosing. Pour the blob over your noodles, serve hot! 

To create the meal pictured above:
Start vegan cheese process first. 
Steam broccoli, once steamed add noodles into the green broccoli water below steamer and cook noodles until they have reached your desired noodliness, this should take up the 10 minutes for the vegan cheese to set. Cook the cheese. Strain the noodles, put noodles on a plate, pour cheese over noodles and it is option to add the guacamole on top, sometimes i put my home made hummus on top!
