Jays Peanut Butter Avocado Cinnamon Cookies - Vegan Gluten Free

How did he do that?

1 cup all natural peanut butter (not the stuff that contains icing sugar)
1 cup avocado (because I ran out of coconut oil)
2 flax eggs
1 teaspoon Vanilla
Optional 1/4 cup of Honey

1 cup of raw or brown sugar

1 cup of gluten free flour (with an extra 1/4 cup on the side for later)
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt

Except for the sugar, in one bowl mix all dry ingredients together. In a separate bowl cream together avocado and peanut butter, blend in sugar and flax eggs (I made these flax eggs with two tablespoons of ground flax mixed with 6 tablespoons of water, whisked and let stand for at least 10 minutes). Stir in dry ingredients until mixture becomes a doughy consistency adding flour from the 1/4 cup to thicken as needed, coat pans with oil with your hands keeping some oil on your fingers to roll the dough into tablespoon sized balls. Press each ball down with a fork going in both directions to make the international symbol # on the cookies, this lets everyone in the entire world know, that these are peanut butter cookies. Bake at 350 for 12-15 minutes.
