2 Cups Mashed Sweet Potatoes
1 Cup Butter/Coconut butter or Oil
4 Tablespoons of Maple Syrup
1/2 Cup Cocoa Powder
1 Cup Gluten Free Flour
Mix all dry ingredients in one bowl.
Mix Maple Syrup into the butter.
Add Sweet Potatoes to the Dry Mixture
Add Maple Syrup and Oil to the Mixture
Pour into a pan (I used a bread pan so that they were nice and thick!)
Preheat oven at 350*F
Bake for 35 minutes.
Whip up some icing. I used regular icing sugar (gross) for this recipe because that's all I had available.
-Add Cocoa powder, Oil, water or almond milk, blend until it reaches your desired consistency for the icing.
Let cake cool well before applying the icing.
