Mike lives with a visual impairment and still went above and beyond to figure out how to become a rapper! Jays Vegan Gluten Free Apple Squares In one bowl:3 Teaspoons Ground Flax1/2 Teaspoon Yeast1 Teaspoon Brown or Raw Sugar1/2 Cup Warm Water*Set aside and let sit for about 10-20 minutes until yeast mixture has begun to bubble up and foam. In another bowl blend:6 Teaspoons of Gluten Free Flour1 Teaspoon Baking Soda1 Teaspoon Baking PowderPeel two apples, quarter and core them, and slice the quarters lengthwise into thin slices about 1/4" inch thick. Mix the two bowls together and blend until it forms a smooth batterPour batter into a bread pan lined with parchment paper. 2 Cups Mashed Sweet Potatoes1 Cup Butter/Coconut butter or Oil4 Tablespoons of Maple Syrup1/2 Cup Cocoa Powder1 Cup Gluten Free Flour Mix all dry ingredients in one bowl. Mix Maple Syrup into the butter.Add Sweet Potatoes to the Dry MixtureAdd Maple Syrup and Oil to the MixtureBlend well. Pour into a pan (I used a bread pan so that they were nice and thick!) Preheat oven at 350*F Bake for 35 minutes. Whip up some icing. I used regular icing sugar (gross) for this recipe because that's all I had available.-Add Cocoa powder, Oil, water or almond milk, blend until it reaches your desired consistency for the icing. Let cake cool well before applying the icing. Enjoy!
Jay's Vegan Gluten Free Corn Bread! Oh So Good! 1 Cup Corn Meal 3/4 Cup Gluten Free Flour 3 Tablespoons of Raw or Brown Sugar 1 1/2 Teaspoons of Baking Powder 1/2 Teaspoon of Baking Soda 2 Flax Eggs 1 Cup of Almond Milk 4 Tablespoons of Coconut Oil Mix dry ingredients in one bowl, and wet ingredients (including oil) in another bowl. Slowly blend wet ingredients into the dry bowl stirring until mixture is smooth. Pour mixture into baking pan lined with parchment paper and let sit for 10 minutes. Preheat oven to 425*F Bake on middle rack for 20-25 minutes until the top goldens. Let cool. Serve. Enjoy!
