Jay's Vegan Gluten Free Corn Bread! Oh So Good! 1 Cup Corn Meal 3/4 Cup Gluten Free Flour 3 Tablespoons of Raw or Brown Sugar 1 1/2 Teaspoons of Baking Powder 1/2 Teaspoon of Baking Soda 2 Flax Eggs 1 Cup of Almond Milk 4 Tablespoons of Coconut Oil Mix dry ingredients in one bowl, and wet ingredients (including oil) in another bowl. Slowly blend wet ingredients into the dry bowl stirring until mixture is smooth.  Pour mixture into baking pan lined with parchment paper and let sit for 10 minutes.   Preheat oven to 425*F Bake on middle rack for 20-25 minutes until the top goldens.  Let cool. Serve. Enjoy!

Jay's Da-Lish Vegan Gluten Free Pancakes! Om to the Mutha-Fluffin Nom Homeboy!

1 Cup of Gluten Free flour (or regular flour for everyone else)1 Tablespoon ground flax 2 Teaspoons of Baking Powder2 Teaspoons of Cinnamon1/4 Teaspoon of Salt1/4 Teaspoon of ginger powder (Optional)1/4 Teaspoon of Nutmeg (Optional)2 Tablespoons of Brown Sugar/Raw Sugar (Alternatively you can use honey, or maple syrup, if this is the case add this to the wet mixture below)1 Teaspoon of Vanilla1/4 Cup of Unsweetened Applesauce1 1/3 Cup of Almond/Coconut/Cashew MilkCombine dry ingredients in one bowl and mix. Jay's Quinoa and Steamed Veggies - Vegan Gluten Free Recipe

This is more of an idea than a recipe. Steam your veggies of choice until they have reached your desired softness keeping the steamed run off water in the pot below to use for cooking the quinoa. Quinoa needs to be thropology rinsed. I don't measure my quinoa I just dump a drop in a couple handfuls, it usually swells up to about twice the size. Some people cook their quinoa until it's a soft mush like oatmeal and if that's the case for your cooking method it will swell up greater than twice the size, I prefer to take it out the boiling water once the outer shells have released from the inner seed and look like this: (o   o...
